Many that spend that "fortune" on a service for their loved ones do so FOR the loved one, so that friends, relatives and those that cared can have a time to get together and remember the deceased. If money is a concern, I can see why a family would forego such a remembrence. They can be costly.
I am one that WANTS to be surrounded by decaying neighbors. I want a PLAIN pine box, no preservatives AT ALL, and buried in a cemetery that allows no vault, so that I will rot into the ground as quickly as nature will have me. I also see no sense in being pickled.
But the service before I am buried is up to those left behind, and I can't see myself depriving them of anything they would find comforting. THAT service is for the living, and a recently dead guy shouldn't take that from them if they feel they need it. I have heard many people say things like "We didn't have a service because that's the way s/he wanted it. It was very hard on us to not be surrounded by loved ones at such a difficult time, but that's the way s/he wanted it."
Funny that loved ones rarely get options, when "funerals are for the living".
