A lot. We have a small "room" between our kitchen and pantry, with a very tall bookcase where most of our cookbooks live (keeps them out of the line of cooking). Pretty sure it's over 100. I've resisted the urge to acquire a cookbook from each country/culture, but I do have a number of medieval and Renaissance associated ones (kinda hard to find), and WAY too many Moroccan ones -- half of those qualify as coffee table books, since they are large and have beautiful photographs accompanying them.
Very few are actually used, but we have the space for them and so it's nice to have the references.
