I've done it, but can't be a judge of the difference if you use "alcoholic" wine, because I don't drink and don't use real wine in cooking. An edition of "Gourmet" or some such stated a year or so ago that the idea that 90% of the alcohol content of wine was "burned off" in the cooking process is incorrect--it's more like 40%.
Recently, a friend making gravy to accompany a pork roast gave the gravy a couple of good shots of POM pomegranate juice. Said it was a real success.
